I was working on aMuffin Factory from Pedal PCB and I noticed the diodes I bought are listed at 49 HFE and the requirements that are for the pedal are 55-65. Can I use these diodes or do I need to buy new ones. Also how can I tell what the CBE leads are?

While I'm not sure if that will work properly or not, it's kind of easy to find CBE.
The datasheet will provide which leg is CBE, what type of transistor it is.

Diodes with Hfe? You evidently ment 106NU70 - an old czech germanium npn transistors. See list below. Slightly lower Hfe is not so problem, it will has little less gain.

With that small of a difference, I doubt it would even be a difference that can be heard.
