I've written like 17 songs with one note solos, and proud to say, I nailed every one of them in one take  8).

In all seriousness, there's lots of songs that I think have great "sparse" solos (as in the right number of notes to suit the song), but I can't think of any great one note solos.

Not a one note solo, but stick with me here: the solo on Psychic Wars by BOC is f'n brilliant. This was one of the first guitar solos I ever noticed way back when I was maybe...10yo?

It's not quite a solo, but this song has a fantastic one-note piano part (okay, it's an octave, but still) in the bridge:

Lots of sparse playing going on here, but not sure if it's all one note with bends and vibrato or hammer-on's too.

Hey, I embedded a video!!

FYI, regarding Cinnamon Girl, Neil Young was once asked about his "one note solo".

He replied, "It's one note, but each one sounds different." :D
