Mounted Pots?

Man I got a million questions. I haven't built anything for 9 years (I think). I was designing my own circuit boards but now I've forgotten so much. I feel like a noob.  :(

When I was doing this before, if I recall correctly we were just starting to talk about mounting the pots on boards. Pre-fabricated boards were rare.

My question. If I etch my own boards can I still mount the pots on the board since it is only one sided?

Yep, you sure can.  They are a little easier to use imho on a prefab board since you can solder them from the component side, but soldering them from the copper side isn't too bad.
Here's an example of a one sided pcb that uses mounted pots
