I've question about either of these PCBs. I'd say I'm fairly competent with making fuzz, overdrive, and distortion pedals and understand how they work and the methods I can use for debugging.
I've made a phaser (madbean stage fright) I just followed the instructions that were on the pdf it worked perfectly.
So is there anything about either of these projects that won't be strait forward? I'll just follow the instructions in the pdf. Will I be fine?

The aquaboy has a lot of options, that's why it is considered a genius build. Just ready the document thoroughly, maybe more than once, plan carefully and you will be fine
