I just found a schematic for Pinnacle

but I don't have any on-on DPDT is there a way to use an DPDT on-off?
Also do you think should I add any trimmers to bias betters the jfets?

I've never seen an on/off DPDT.

DPDT switches can be had for not much money. Perhaps you could find one at Tayda, or if you post your location there might be a member here who could help you out?
