One I Love - Little Wing by SRV. He typically did a really good job with Hendrix stuff, but this is my favourite, because he's manages to capture the beautiful essence of the song without needing vocals.
Other Bands who do a solid job on covers regularly
Disturbed - routinely cover songs which are "typically" in their genre
Halestorm - an EP of covers every couple of years, spanning from Fleetwood Mac to Marilyn Manson
Chris Daughtry - despite the fact I can't stand his latest disc, he's got a real knack for covers
One I Hate - err, there are a lot of bad covers out there. As a general statement, most "contractual obligation" cover albums (i.e. throw togethers to meet the one last record requirement to get out of a contract) are usually at least 50% excrement, especially when you get bands like Poison covering Mott the Hoople or Bowie. There are some exceptions, especially for bands that stay within the wheelhouse (The Covering by Stryper was like 90% good, The Immigrant Song was terrible), but in general they are usually fails.
Guilty Pleasures - covers of tunes by strong females artists, like Heart or Pink. Songs like "Try" by Pink have been covered in a number of formats really, really well, as well as "Alone" by Heart.

Not really a guilty pleasure but not something I listen to regularly.
I was going to go with Lisa Cuthbert - Fragile Dreams (Anathema Cover), but found her take on This Corrosion (Sisters of Mercy) instead which is even better. Love her voice and melancholic style.
Her cover of 'Look at my Horse' (Weebl and Bob) is quite spectacular considering the original ;)
I have so much hate for a lot of modern remakes of songs by people who lack the vocal personality to pull them off. I think I've successfully purged them from my mind though as I can't think of a single one off the top of my head.

Here's a guy who did surprise me with his versions compared to the originals. I like them both. It's interesting that the meanings of songs sometimes become a little more apparent, or real, when the song is covered in another style.

I totally agree about the SRV cover of Little Wing. It helps that it's a great song to begin with. I really like Sting's version too. The transition from Bullock's guitar solo to Branford's sax solo is beautiful.
Not sure this counts as a cover, but it's close enough to the idea for me. The Jim Hall version of the Concierto De Aranjuez is one of my favorite things ever,

Yes, Cake is awesome... disco anthems... one must be cautious.
Who cares if something was a disco anthem first? You don't have to quantify your taste by saying you feel guilty. Why should you feel guilty about liking a song? If you like a thing, then like it. It's just music, it's not like you're admitting you like to make babies cry or anything. Real cred comes from not caring what people think anyway.
(And that's why I don't believe in guilty pleasures. 8) )

I wouldn't say I'm embarrassed at all to like Cake or that song. I list it as a guilty pleasure more so because of how different it is from the original. I imagine the guys from Sabbath didn't have that vibe in mind when they wrote the song and would be a bit put off if I told them I liked it more than their version!
