I just signed up for the 'Survey of Music Technology' course. I'm a noob with DAW's and programming and this covers a bit of both.
I signed up for jazz improv a while back but it went right over my head straight away so I dropped out...
I am however signed up for "the music of Rolling Stones" or something titled similarly that's coming up! Not much of a course per se, but it'll be nice to catch up on some r'n'r history.

That DSP course should be pretty good. I've learned tons from the papers and websites from the two profs teaching the course. There's no way I'm going to have enough time to do it this time, hopefully they'll offer it again.
I should sign up for the Jazz Improv course. It looks like a ton of work and I'm lazy... I'll have to see if I can force myself to do the work.

I just signed up for Audio Signal Processing for Music Applications!
That music production course sounds great but I can't spare 8 hours a week...
There is so many good courses online these days - I wish I had some free time...
This MIT one is good - if I find the time I might take it again - you can't know the basics too well.

Intro to music production started today. So far, I'm enjoying it. It's very fundamental stuff but I'm already picking up new things so I'm having fun. I got through all of the week 1 lectures and quizzes. Anyone else doing this one?
I noticed the DSP course and would love to have a go at that (did a tiny bit of DSP a long time ago at Uni and loved it).
