Would a 30pf and 270pf be ok as a substitute for the 27 and 270pf.

The 30pF will slightly increase high roll off but not enough to be audible by a long shot so that's fine.

The 270pF will increase the delay time, you may get whine at full delay time with it but it will work okay.
