I'm working on a build that calls for a normal 100kA pot and I purchased a 100kA dual gang pot. Can I till use the dual gang pot instead of a normal 100kA pot?

Yep.

A dual gang pot is really two pots with one shaft.

Just do a test fit before you wire it into the enclosure.
