Another question for the v2 board - is it possible to fix the depth as always full?

I spose I could always just wire a trimmer internally that might be an idea!

Yes you can totally do that. I suggest using a trimmer, as that will allow it to work correctly. Otherwise you could use a pair of resistors, one from pad 2 to 3 and one from 2 to 1.
