I ran across this and found it interesting so I thought I'd share. There are lots of other good comparison charts with steepness curves.

No D9D diode? I hate this graph and everyone who made it!

More seriously, though, I would class diodes into a few categories, based on Fv. Germaniums, silicon signals, LEDs, and power diodes. Find some variants you like, do a bulk order, and go with that.
