I'm having a moment of "Unclarity"...
can I use a SPDT in place of a SPST? and how do I wire it?? (two wires, one jump?)
I'm confused, all of a sudden simple things are way out of control..

Yes you can.
A SPST switch essentially connects the two wires in one throw, and disconnects them on the other. With a SPDT, you have one more lug to make a connection on the other throw, and you just don't use it.
