I can't find AD712, just AD712XX where XX can be all kinds of things. Which will work [best]?

As long as it's not SMD, you don't need to care.
You only have three that are in DIP packages (the "standard" through-hole IC style)

AD712JNZ - Most common - plastic casing.
AD712JN
AD712AQ - Ceramic version; more expensive.

When choosing an IC, always look for the code DIP/PDIP/CerDIP in the listing for "package."

I'm having trouble finding any of these at a sane price.

Is there anything else that's going to give a similar tone?

lots of people seem to like the opa2604 in the serendipity.  it is now available at tayda.  but you can even use a tl072 if you want.
