R19 is a current limiting resistor that will affect both the modulation indicator LED brightness and the LDR brightness.  So it will change the modulation depending on your value selection.

You are likely on AC.  I don't know that multimeter but you likely have to hit the SEL to change it from reading AC voltage to DC voltage when you select the V setting.

Make sure the 30pF compensation cap is connected to pins 1 and 8 of the LM308.

I paused the videos as needed to take notes and ended up with about a five page quick reference guide.
I still need to play around with the different footprints in the libraries to see if there are some things I might prefer over others.
So far I've found the learning curve to be very reasonable. It's the first program I've followed through with though... (only lightly messed around with Diptrace and Eagle) Some folks who are already highly experienced with another platform might find it a little more difficult adapting to something different. I really couldn't say......

Contextual Electronics has been using KiCad and making tutorials about it for years.  Chris also runs the AmpHour Podcast with Dave Jones.
I'm only a casual user of KiCad.  Such as if someone sends me a schematic in Kicad haha so I'm not much help on the UI.  I just know how to do what I need, but that is where I'd start if I was serious about learning it.

If you're just getting started with ECAD I would recommend starting with KiCad and following the Contextual Electronics tutorials.
If you only have access to a newer version of Eagle it could be dead in the future and you will have to migrate to the Fusion360/ECAD mess.  Kicad is also free with no board size, layer, or pin count limitations.  Just my opinion though.

They are good scopes for the most part.  I've had a DS1052E for 4-5 years now and it has served me well.

You could use something like the Eurorack world uses.
I've used these on some projects.  The cables are super easy to make or buy.  You can get ones with fewer pins but this is what I grabbed from my parts library.

Input jack and output jack wiring is also very important.
If both jacks are grounded to the enclosure, I would use a fiber washer or some other method to remove one of the jacks, input or output, from grounding to the enclosure.  Ground the jack you isolated to the PCB ground.  This can help reduce oscillations through a ground loop created through the enclosure itself.  It's amazing how many noise issues this solves.  Many times grounding both jacks to the enclosure is fine, but it can cause an issue in some circumstances.  By grounding the enclosure at only one point (to create an EMI shield) you eliminate a possible unwanted ground return current.
