Tech Help - Projects Page / NOS MN3005s Bias or DOA?

I bought two NOS MN3005s from the recent Synthcube sale. I tried to use both in a Man O War Deluxe I built (chip sockets), but can't get them to bias at any settings (Bias 1 or Bias 2), to pass the delayed audio signal on pins 3 or 4 of each, even though the voltages are correct to the build guide, and an audio signal appears at both BBD chip input pins. 
I have a Setback Delay that works perfectly with an Xvive MN3005, so I tried each NOS in that build, but can't get either of the NOS chips to bias or work in this either.
I don't have advanced testing tools like an oscilloscope, but I have successfully biased other BBD projects by ear, so are there any tips on how to get these to bias by changing the values of parts? or is it possible these are both DOA?

General Questions / SAD512D Projects?

I found an old Ensoniq synth pcb board in my junk pile with 4 SAD512D chips waiting to be pulled and tested—along with a bunch of NEC 4558s :) I'm not sure I can test these outside of a project. Any ideas for a decent DIY project that I can use at least one of the BBDs, and maybe all four if they're all good? Can a SAD512D simply replace other BBDs like MN3017, MN3019, MN3007, MN3009 in projects?

I just realized that i didn't receive a 1MC 5% pot with my MB Tractor Beam board I ordered a few months ago. It says in the build doc that it's included, maybe it no longer is? Can I use a regular C1M - 1 Meg Reverse Log pot (10%) in it's place without much loss of functionality?
