that's amazing!  does the finish survive a bit of wear and tear?

For the labels, I use a label maker and glue them to colored foam and cut out the super glue to the fabric.
The fabric seems to hold up pretty well. I started doing the fabric about 3 1/2 yrs ago. We'll see in 10 yrs what they look like

I would bet that the left footswitch swaps potentiometers in the circuit, giving you two different presets.

You are correct. The left foot switch toggles between the 2 rate knobs

I'm a sucker for funky fabrics. I'd love to see guts, especially the FS to the two pots (likely not as difficult as I'd make it be).
