Hi all,

I'm sorry for asking such a noob question but I am new to the world of electronics.

If I am building a circuit that has a connection like below but I do not want to have a battery snap, then I can just switch the jack to a mono jack and leave one leg from the 2.1mm DC jack unused, correct?

Yes, leave the leg that the battery snap is connected to in you drawing open.  It receives no power from the outside plug. When there is no plug inserted the two pins are bridged which allows power to flow from the battery to the outside lug.  The bridge is broken when a plug is inserted which keeps the battery from exploding when outside power is coming in.  The stereo jack keeps the circuit open to save the battery.  When a guitar cable is inserted the circuit is completed and begins to draw power from the battery.  The people who come up with this stuff are pretty smart.

By the way, never apologize for asking questions, that's why these forums exist.  ;D
